Position Summary
Follows a menu to prepare and cook meats, fish, poultry, gravies, cereals, soups, vegetables and other food according to proper preparation methods. Familiar with a variety of food service concepts, practices, and procedures, relies on experience and judgment to plan and accomplish goals. May lead and direct the work of others.
Physical demands:

Primary Duties
1. Previews menus and work orders to determine type and quantities of meats, vegetables, soups, salads and desserts to be obtained and prepared, according to recipes.
2. Plans and coordinates cooking schedules so that foods will be ready at required times.
3. Prepares, seasons and cooks food; helps to serve food and beverages on patient/resident meal tray line.
4. Measures and mixes ingredients according to recipes.
5. Uses a variety of kitchen utensils and equipment including grinders, slicers, mixers and blenders.
6. Ensures that all foods prepared meet standards for quality, temperature, freshness, taste and appearance.
7. Ensures that all cooking equipment and utensils are inspected and maintained for cleanliness and proper operation.
8. Ensures that required sanitary levels are maintained throughout the food preparation process.
9. Alerts supervisor to problems and needs concerning equipment and food supplies. Detects and reports spoiled or unattractive food, defective supplies/equipment or other unusual conditions
10. Assists with care and maintenance of department equipment and supplies
11. Maintains department records, reports, and files are required
12. Attends required number of department meetings per year.
13. Performs other related duties as assigned or requested.
14. Prepares cold food items per recipe
15. Washes and sanitizes dishes, service ware and cooking equipment
16. Patient meal delivery and pick up; including assembling trays
17. Conducts department cleaning including sweeping, mopping and assigned cleaning scheduled items.
Qualifications
· High school diploma or equivalent preferred
· A minimum of 1 year of experience in food service/cooking
· San Bernardino County Food Handler’s Certification (may be obtained 14 days after hire)
